The evenings are closing in; the mornings are getting chilly, the leaves are turning autumnal, but this is all cause for celebration, because it means it’s finally UK chilli season! We always await the call from our good friends in Cornwall to let us know they’re harvesting. The first call that came in was to let me know I’d be receiving some Paper Lantern peppers.
Paper Laterns are an early-ripening habanero strain, which ripen to a beautiful red colour and intense, but not offensive heat of 250k scoville units and a lovely, elongated shape. We thought this would work as a really well-balanced sauce with mango, pineapple, and big chunks of fresh ginger, offset by the finest organic apple cider vinegar. A nice amount of sweetness means this can be paired with many strong flavours.
Ingredients: Water, chilli, apple cider vinegar, onion, mango, pineapple, agave nectar, ginger, garlic, salt, stabiliser (xanthan gum).
