Right, after making the sauce titled Hot Chocolate, we were told we’d be getting some of the peppers called Hot Chocolate. OMG, life is so CONFUSING sometimes! Anyhoo… this needed to be something a bit special, and given that the Hot Chocolate chillis are a habanero derivative, we knew it also needed to be something different from the existing product.
Different it most certainly is, and this immediately became a huge favourite. We started by adding a bit of blackstrap molasses, then, a bit of ground nutmeg, and a pinch or two of cinammon. Then, we toasted some star anise, cloves, cardamon, and bayleaf, before wrapping them, and letting these aromatic spices infuse slowly. What a result! The rich colour of the chillis has maintained beautifully, and the sauce is rich and flavoursome. We love it.
