We’re going to level with you. These Hurt Berry chillies were a surprise. We’ve never even heard of them before January, so when they were offered up by our growers, we said “let’s have ’em!”. So, they arrived, and we started the prep. As with every chilli at Catford Fire, we always taste the fresh chilli to see what we are dealing with. Put it this way, we wish we’d done a bit of reminder research beforehand, as they are BEASTS. A quick bit of research revealed they’re a hybrid of Carolina Reaper, Moruga and Jigsaw chillies. Um, yeah, that’s probably why they’re a bit warm… They didn’t soften in the cook either, so a bit of smokiness went in, as well as the usual balance of fruit for texture and sweetness. This is one of the hottest we’ve ever done. Like, closer-to-God hot. You’ve been warned.
Ingredients: Water, chilli, apple cider vinegar, onion, mango, papaya, pineapple, coconut sugar, garlic, salt, stabiliser (xanthan gum) liquid smoke flavour (molasses, caramel colour).
