The text message told me what I wanted to hear – the 7 Pot Lucy peppers we’d ordered in January were ready, and I was getting my hands on 2kg of these precious chillies. Even better, they’d turned out to be a wonderful bright yellow colour. The crop failed last year, so it’s been a long wait. And oh, wow, do these have a load of flavour and so much heat – nudging 1 million scoville units, on account of their naga viper heritage.
We knew we needed to keep this one pretty simple, as the flavour was just there already, so we added some ripe plantains for texture and background sweetness, and a little bit of pineapple. We knew we’d got it spot on on the first taste, so we bottled them right away.
