Time for a change of colour. This one’s green, but it’s no amateur. We hand-selected only the green scotch bonnets at the market, which means the sauce is slightly milder, and brings about the very slightest of bitterness from the green chilli, which will accompany richer foods very nicely. We kept this one simple, but added a bit of fresh lemon juice as well as some aromatic Thai basil to provide the depth.
This is a Cat 3 (hot) sauce, but we debated putting it as a 4. You won’t want to see it when it gets angry!
Ingredients: Water, green scotch bonnet chilli, apple cider vinegar, onion, agave nectar, garlic, lemon juice, salt, thai basil, stabiliser (xanthan gum), bayleaf.
