We loved making this sauce. The Bhut Jolokia (aka Ghost Pepper) ranks as one of the very hottest chillis on earth, tipping the Scoville scales at over 1 Million SHU.
We felt that a touch of smokiness, to balance out natural sweetness from some pineapple would be good for this one, with a touch of organic cacao to enhance the depth of this sauce further. This is hot, but doable. The heat hits right away and lingers, but doesn’t prevent enjoyment of the sauce itself.
As with all superhot sauces, slowly does it!
Ingredients: Water, bhut jolokia (ghost) chilli, apple cider vinegar, red onion, fresh pineapple, ginger, garlic, date syrup, cacao powder, natural liquid smoke flavour, salt, stabiliser (xanthan gum)
