We tried something a little bit special with this one. We started with the blistering heat of the bhut jolokia (ghost) chilli, added some natural hickory smoke flavouring, then went to work on the garlic. Normal garlic, yes, then the good part – some of our homemade black garlic – a true delicacy that imparts a caramel richness of flavour and a different type of smoky taste.
The result is a sauce that tastes almost like tomato soup (a very very hot one!), but with no tomatoes in sight. We kept a fair amount of this one back for ourselves and it’s going down an absolute treat.
This sauce should be used in moderation.
Ingredients: Water, ghost chilli, apple cider vinegar, onion, agave nectar, garlic, black garlic, salt, natural smoke flavouring, stabiliser (xanthan gum).
