You are going to want one of these. This is a rich sauce, but using minimal ingredients. We used a blend of two chillis to make this lovely concoction – it’s mostly Yellow Habañero, but we’ve added in a handful of Aji Limons as well – grown from seed by yours truly here at Catford Fire HQ! The lemon drops (as the ajis are also known) are a big staple in Peru, and give a lovely citrusy note to the sauce, something we’ve accented with some Thai lime leaves. We really like putting drops of this on tacos, or to give a big boost to chips and guac. It’s certainly not mild, but not as outrageous as some of the superhots we’ve made.
Ingredients: Water, yellow habañero chilli, onion, aji limon chilli, apple cider vinegar, agave nectar, garlic, bayleaf, lime leaves, salt, stabiliser (xanthan gum).
