It’s a new year, so it’s time to get creative! We used a blend of fiery red scotch bonnets and cayenne peppers, added a good handful of fresh ginger, and some pineapple for sweetness and extra zing. Then, the magic ingredient – amchoor/amchur, which is used in northern India to add sourness and fruitiness to sauces and pickles. It’s made from dried green mangos, and also acts as a thickener. The result is a sauce packed full of acidity and flavoursome sourness. This will go incredibly with any Asian food, but, if you’re like us, it’ll go over most things…
