Now then. Settle down. We’ve done something a bit different. We fermented the crap out of these superhot Cornish ghosts, and left them to sit for a long time. They just kept maturing, so we just left them. The natural acidity and added salt took care of the preservation. All we needed to do was wait.
Fast forward to today and we decided to cook them off with some mango, ginger and some ripe bananas. It’s a beauty. And very, very hot. Good things come to those who wait indeed.
Ingredients: Water, chilli, apple cider vinegar, onion, mango, banana, agave nectar, ginger, garlic, salt, stabiliser (xanthan gum).
